Learn the recipe to create and shape perfect sweet potato gnocchi, sauté fresh greens, top it with a burnt lemon-sage-olive oil sauce and shaved soft salty parmesan. This class is a three-course meal, and also includes learning to massage creamy avocado into a tough kale leaf and break it down to be a delightful first course. Finish with a paleo and gluten-free Dark Chocolate Pear Delight with Almond Coconut Crumble on top.

Learn a classic French Vinaigrette to dress Arugula, Sun-dried Tomatoes, Pistachios and Strawberries.
Sweet Potato Gnocchi
Roast and skin the sweet potato to then form it into a perfect gnocchi using almond flour, millet flour and eggs. Paleo options available.Gnocchi is sautéed and served on a bed of sautéed spinach, garlic and fresh corn. Shaved manchego on top (optional for non-paleo).
Dark Chocolate Juicy Pear, Almond Coconut Crumble
Crumble roasted almond and coconut delights over lightly cooked pear and rich dark chocolate. Served with dairy-free ice cream.
